Description
Ingredients: Shrikhand is primarily made from strained yogurt, which is obtained by hanging fresh yogurt in a muslin cloth or cheesecloth to drain excess whey. This results in a thick and creamy consistency, similar to Greek yogurt. The strained yogurt is then mixed with powdered sugar to sweeten it, along with aromatic spices like cardamom, saffron, and sometimes nutmeg. Additionally, chopped nuts such as almonds, pistachios, or cashews are often added for texture and flavor.
Preparation: The preparation of Shrikhand begins with making hung curd by draining the whey from fresh yogurt. Once the yogurt has been strained to achieve a thick consistency, it is transferred to a mixing bowl. Powdered sugar is then added to the hung curd and mixed thoroughly until the sugar is fully incorporated and the mixture becomes smooth and creamy. Aromatic spices like cardamom powder, saffron strands, and sometimes a pinch of nutmeg are added to enhance the flavor and aroma of the Shrikhand. Finally, chopped nuts are folded into the mixture to add texture and crunch.
